Bakers Secret-Soft crust or hard crust. how to!!

Its not all about ingredients. Its also not always about how you roll or what you add !!
For years i never understood why my mother used to spray some of her home baking with water.
She used to do this straight from the oven on breads and some pastries. I was very young and in the kitchen baking from the age of 6 years old. I was so young and I never wanted to ask the question. She was not the most polite when busy.
Heres the differance Between hard crispy and soft crusts.
For a hard crust you leave it to cool without spraying with water.
For a softer crust you spray with water while it is still piping hot,straight from the oven.
Its a great tip and it works very well. Be carefull not to over wet though. placed on a wire rack before the spray teqnique is best from our experiance.
